The culinary camp is open to Dallas ISD students in grades 10-12
DALLAS—The Dallas Independent School District's Food and Child Nutrition Services Department and the Texas Culinary Academy are partnering to present the culinary camp, Chefology 101.
The goal of Chefology 101 is to allow students direct input on school lunch menus and recipes and promote the food service industry as a career.
The camp will feature Dallas ISD high school students from Bryan Adams, Emmett J. Conrad, Yvonne A. Ewell Townview Center, Hillcrest, Thomas Jefferson, Lincoln, North Dallas, Irma Lerma Rangel Young Women's Leadership School, Seagoville, Skyline, South Oak Cliff, H. Grady Spruce, Booker T. Washington and Woodrow Wilson. Students in grades 10-12 who have an interest in culinary arts, will participate in a one-week camp conducted by Marc Dunham, Texas Culinary Academy chef instructor, and Christina Smith, nutrition education specialist in the Food and Child Nutrition Services Department. During the week, students will learn about cooking techniques, careers in food service, and aspects of menu planning.
"The greatest opportunity for students who participate is to update some school lunch recipes to increase student's palatability and nutrition," said Christina Smith. "Chefology 101 will be a great learning experience for the students."
The classes will be held at the Yvonne A. Ewell Townview Center, 1201 East Eighth Street, from 8 a.m. – 2 p.m., July 16-20. The week will conclude with a one-day trip to the Texas Culinary Academy campus in Austin, Texas and a fine dining experience at their Ventana restaurant.
